Miehen Mac'n'Cheese -resepti

Myönnän: meillä mies kokkaa paljon enemmän kuin minä. Hän suorastaan pitää siitä tosi paljon. Itse laittelen lähinnä nopeita pastoja ja salaatteja, mitä nyt hätäpäässä tulee mieleen. Viime aikoina mies on tehnyt useampaan otteeseen Mac'n'Cheeseä. Syy on se, että aina, kun keksii uuden ruokalajin, sitä pitää harjoitella useamman kerran, ennen kuin tulee hyväksi. Niinpä meillä oli taas Mac'n'Cheese-ilta, kun tulin eilen töistä. Kuten ylläolevasta (Alepan kuitin taakse kirjoitetusta) kuitista huomaa, mies halusi sisällyttää illalliseen jotain suomalaista: hintatason ;) Jenkeissä Mac'n'Cheese oli mielestäni jotenkin hassun väristä. Liian keltaista. Ehkä se johtui siitä, että kokemukseni rajoittuivat pääasiassa Kraftin valmisruokaan ja pikaruokaravintoloihin. Kotitekoisena tämä on kuitenkin ihanan juustoista. Vähän kuin makaronilaatikkoa, mutta ah niin epäterveellistä. Eli syötäväksi korkeintaan kerran viikossa. Alla miehen ohjeet siihen, miten hänen versionsa Mac'n'Cheesestä valmistuu (annan mennä tällä kertaa kokonaan alkuperäiskielellä). Meitä ilahduttaisi linkit muihin herkkuruokaresepteihin, joita voidaan kokeilla kotona - niin englanniksi kuin suomeksikin.

In English: My husband has cooked Mac'n'Cheese pretty frequently lately. Here below you can find his advice on how to make the best possible mac'n'cheese.

Ingredients (serves 3-4 people):
-1/2 bag of gnocchi noodles *you can use your favorite pasta but I use gnocchi because they are more hearty and they form a pocket for cheese and yummy goodness to hide within*
-60 grams of butter (salted or unsalted just adjust added salt later to make up the difference"
-150 grams of coarsely grated mature cheddar cheese
-350 grams of coarsely grated **whatever that white cheese we use...**
-1 package of pork bacon-20 ml of milk (1-2% works fine)
-a dash of baking flour
-1 large egg including yolk
-50-60 grams of fine bread crumbs
-fresh pepper

Instructions:
1. Preheat oven to 180C.
2. Bring 2 liters of water to a rolling boil (add a pinch of salt).
3. Preheat large sauce pan to low/medium temperature for cheese mixture.
4. Preheat 2nd pan to medium temperature for bacon.
5. Cut bacon into small pieces and cook until light brown and then leave in pan to cool *Do not drain fat*.

6. Cook pasta in water for approximately 4.5 minutes (do not overcook pasta). Drain when finished and set aside.
7. While bacon is cooking add butter to the other large sauce pan and allow to slowly melt
8. After the butter has melted immediately begin adding cheeses. Add slowly over the course of 2-3 minutes while stirring occasionally to speed up melting.

9. When mixture is almost completely melted add 1 large egg, 20ml of milk and a small dash of flour about enough in a cupped hand to make a 1 euro coin diameter (when in doubt use less).
10. Stir the mixture thoroughly and reduce heat to lowest level to maintain liquid texture (if you dip a spoon into the mixture it should come off the spoon more like honey versus water).

11. In a medium size glass oven safe lidded container (Pyrex) use a paper towel and spread a liberal amount of bacon grease into the glass container on the bottom and sides.
12. Add pasta to the container along with the bacon chunks so that they are thoroughly mixed.
13. Using a large spoon to slowly add the cheese mixture on top of the pasta. The goal is to allow the cheese mixture to sit mostly on top of the pasta and then as it bakes it will melt further down into the layers.
14. Spread the bread crumbs evenly over the top to create a shell. 15. Cover with the lid and place in oven for 20 minutes.
16. Remove lid and bake for an additional 10 minutes or until the top is golden brown.

Serving instructions:
1. Allow 2-5 minutes to cool.
2. Using a large serving spoon carefully mix the entire contents to spread out the breadcrumbs and cheese to all layers.
3. Eat.
